Baked spicy sweet potato fries

I can't even eat normal French fries anymore after spoiling myself on sweet potato fries. Probably one of my favorite sides/snacks and hella easy to make. Simply wash the potato, cut both ends off and then cut into fries that are roughly the same thickness. I like mine about 1/4" thick and about twice as wide, seem to cook best. Preheat the oven to 425F, line a cookie sheet with foil, put the fries on the pan and toss with olive oil to coat. Then season well. My favorite is kosher salt, fresh ground pepper, smoked paprika, garlic powder, and hot chile powder. I used Dorset naga powder for these and they're righteous. Cook for about 20 minutes or so flipping halfway through. Don't be scared to let then get some color on them, sweet potatoes can take a good bit of black before they stop tasting carmelized and start tasting burnt. You'll probably have to burn two or three to get the rest cooked right.

If you can find Japanese sweet potatoes (purple skin, white flesh) they crisp up a bit better than orange ones, but orange ones still rule.

:)I've never had fries from sweet potato but I can imagine they'd taste pretty good. Looks good mate, I'll put that on my gonna list.
 
Smokin' Tex! mrs. blues and I go to a local joint on the strip that have "atomic cheese fries". Lots of cheese sauce, and chile's. I bet your version with the sweets would make it super wombat! hmmmm...TCG's Super Wombat Atomic Cheese Fries!

Looks AWESOME!!! I LOVE sweet potato fries and will Definitely try this out. Also being baked makes them healthier than frying.
 
sounds awesome!!!! you say bake them...I wonder if you can deep fry them then season and serve? HHMMMMM
 
Of course you can deep fry! But deep frying takes more work I find. I like to bake mine too. I've been trying to cut mine thinner lately as the wife likes more crunch! to hers... but cutting raw sweet potato thin is tougher then it looks...

That plate is making me hungry now!
 
I love'em as well and very easy to do even on the grill.. We have also found them in our Wholesale Club in a big ass bag. I take those and toss virtually the same way ..Yummy
 
Wow I don't know how I overlooked this one! I looove sweet potato fries but I never considered making my own...& baking them nonetheless! Right on!
 
I don't mind sweet potato fries, but my g/f can't stand them. So we usually just cut potatoes into wedges, oil them, then coat them with some sort of spice (Montreal Steak Spice works pretty good). We've also used some lime juice, olive oil, fresh ground pepper and cumin for seasoning. They go really good with a chipotle mayonnaise dip that has mayo, 2 chipotle chilies in abodo sauce, some orange juice, and cilantro.

Very good stuff particularly if you grill the taters on the bbq.
