I also am ribbing it up! Doing 2 racks, dry rubbed, and one destined for a carolina mustard mop, while the other is getting my homemade blueberry and blackberry Habanero chutney slathered on. If there are no objections, my pics may end up here as well.

Lookin serious THP! I guess we've all been taking advantage of the great rib prices leftover from memorial day. Here's mine...

Did the 2:1:1 method, and it worked like gangbusters. Best ribs I've ever eaten. Smoked over hickory and rosemary.

There's a carolina mustard-Q mop on the top rack, and a blueberry and blackberry habanero chutney mop on the bottom rack. Both were devine, and the berry hab rack gave a nice all over burn. Basically a big WIN!

Nice!! I did a dry rub smoked with apple wood over coals. Hit it with sauce in the end (as I usually do). Wings the same. Corn is oil and VooDoo Ash.

Looks like we all killed it!

shoot you guys beat me to finished pics..

mine are smoking right now...about another 3.5 hours and they'll be done...

i changed the position of my thermometer - i did have it in the lid, now its in the side between my 2 racks where i put whatever i'm smoking...we'll see if that makes a difference. so far (1.5 hours) it looks like last time I had too high of temp. I can't wait....

3-2-1 method? Holy hell, those look super juicy! Must try this next round. Ribs are very rewarding, as they take much less time on the smoke than my boston butts did, and are very tasty. What kind of smoker do you have petey? I've been using a brinkman water smoker, and read somewhere to not use water in the pan for ribs. Bam, can you comment on this?

3-2-1 means... 3 hours in the smoker,2 hours wrapped in foil,1 hour out of foil and back on Q'er to firm.

but usually when you cook the 3-2-1 method your ribs will come out slightly overdone...they are still tasty but they fall off the bone too easily

3-2-1 is a guideline..generally when i do wrap my ribs, the first part of the smoke(the 3) i look for the meat to pull back from the bones about 1/4", thats when i foil

water is a good thing...it keeps your smoker from getting heat spikes... i used the same smoker for years and i just sold one last month only because it was too small for my use
