  • It must be jerk! Fusion/experimentation welcome. There are no restrictions as long as you keep it recognizably jerk.
  • List your ingredients broken down as much as possible.

I have two entries prepped and in the marinade. One for this evening and one for tomorrow. One fish. One chicken. As per THP rules, I will post all piccy's at the same time. My jerk marinade is as follows....

minced garlic
minced shallot
minced habanero
green onion
cilantro
allspice
cinnamon
cumin
brown sugar
soy sauce
lime juice
orange juice

I may also post details in the Drunken Chef thread so as not to clog up the Throwdown with drunken voodoo...I will be attemting to kill off the Ebola/Swine Flu virus which is probing me for weakness. Tequila may or may not work.

Pepperfreak's Jamaican Jerk Grilled Kabobs

MY FIRST ENTRY: Jamaican Jerk Grilled Kabobs with grilled spicy corn on the cob

I guess I'm going to be the first to enter this throwdown...

Here is the recipe for the Jerk paste and Kabobs:

- 1/4 cup extra-virgin olive oil
- juice from 1 lime
- 1 Tbsp. lime zest
- 2 cloves of minced garlic
- 2 Tbsp. oregano
- 1 Tbsp. onion powder
- 1 Tbsp. brown sugar
- 1/2 tsp. ground allspice
- 1/4 tsp. ground cinnamon
- 3 tsp. Orange Hab Powder
- 1 boneless, skinless chicken breast
- smoked beef sausage
- 1 green bell-pepper

Here is the recipe for the spicy corn on the cob:

Extra-virgin olive oil
1 Tbsp. garlic powder
2 tsp. ground basil
2 tsp. ground black pepper
1 tsp. Anaheim Powder
1 tsp. Orange Hab Powder

Cooking the Kabobs

Assemble the Kabobs, I arranged them by green pepper, sausage, chicken then green pepper...Bast the kabobs and then grill. Turn them frequently and bast at every turn.

Cooking the Corn on the cob.

Peel back the husk, but do not remove it. Brush the olive oil mixture on the cob and re-apply the husk. I used a piece of kitchen string to hold the husk closed. Place on grill and cook until done. I cooked it over low direct heat for half of the time and then indirect heat for the remainder. It took approximately 15 minutes to cook.

This meal was out of this world!!! In fact it was so good that I think I have over ate, I'm ready for a nap.

Ooooooooh Jerk Kabobs! Excelent PF! That corn looks nice and crispy!



Here's the Jerk recipe. Borrowed it from Walnut here at THP, and modified it a bit


3 tablespoons whole allspice berries
1 bunch green onion
1 bunch thyme leaves
2 tablespoons fresh ginger
1 teaspoon black pepper
1 teaspoon chinese 5 spice powder
1/2 cinnamon stick
3 tablespoons veg oil
5 Yellow and red "Habanero Like" Chinenses
3 tablespoons fresh garlic
1 tablespoon salt
1/4 cup lime juice
1/2 cup orange juice
1/2 cup fresh chopped pineapple


I've only got one entry, and it's in the fridge gettin acquainted with the Jerk paste. Overnight marinating really takes the jerk thing to another level.

I'M MAKIN JERK RIBS BABY!!!!

Mine is cooking now. Do I have to post the jerk paste recipe? I mean we all know all the ingredients for that right? I only made a couple variations. I used a fatalii and a little extra brown sugar. I will be posting surf and turf.
 
No you don't have to break down ingredients ;)
 
I got mine readying in da fridge now...it's gotta set up a bit.

Involves fish and a mango/hab chutney...I don't think even Ming's made this b4... :twisted:
 
BLOODY JERK

A Bloody Jerk is a jerk-spiced Bloody Mary, with a jerk chicken wing garnish.

It's not a drink... it's a meal!

The jerk chicken:
Dark rum (Jamaican preferred) and jerk paste marinated chicken wings

The Bloody Jerk mix:
(This will fill an empty 3L Poland Spring bottle, seen in pic)
Apprx. 75 ounces tomato juice
10 ounces jerk sauce (tomatoes, scotch bonnets, molasses, onions, spices...)
5 ounces jerk paste (peppers, all spice, spices...)
1/3 pound diced red vinegared Peppadew peppers
1/3 pound diced orange vinegared Peppadew peppers
2 fresh Serrano peppers cut into rings
1 lemon cut into wedges
1 lime cut into wedges
9 ounces prepared horseradish

The garnish:
Grilled jerk chicken wings on a bamboo skewer separated by miscellaneous peppers; orange Peppadew (vinegared), cherry pepper (vinegared), Serrano (at the top; fresh).

BLOODY JERK:
Mix one up! Shake the mix, fill a pint glass 3/4 full or a little less if you like it strong. Add vodka. Stir well. Add garnish. SERVE! Dunk if you want!

I don't know how to top that one THP, but here's my entry. Let's call it JayT's Jerk Surf and Turf. It is a jerk whole red snapper topped with homemade mango salsa, two honey chipotle marinated and jerk rubbed delmonicos and two jumbo jerk shrimp skewers.

I don't know if the pics do it justice, but this is some of the best jerk I have ever eaten.
 
Jerk-Seasoned Fish Cakes w/ ApricotMangoHab Chutney

Well, here's my idea...

First, I made a chutney out of mango, apricot, orange habs, grated fresh ginger, Walla Walla sweet onions, cinnamon, nutmeg, allspice, lemon juice, just a splash of white vinegar, S&P, a sploosh of Scorpion's Lust Sauce, a few capers and organic cane sugar.

Gave a nice roll in the pan until it started to thicken a bit...

Then, put in fridge to await teh rest of the goodies.


Cleaned up some Whiting fillets, rubbed up all over with a bit of EVOO, then applied Rasta Rub, hab powder, sea salt and pepper.

(Rasta Rub contains: Garlic, sugar, allspice, pepper, nutmeg, cinnamon, thyme, onion, scotch bonnet pepper.)

Put the fish in toaster oven at 350F and baked it until was nice and flakey.

Let that cool off while I mixed up some eggs, mashed potato, cornmeal, flour, chile powder, and a few crushed Tomato & EVOO Triscuits...teehee.

Crumbled the fish into the mix, and gently made into cakes.

Fried 'em up with the Cast Iron....

Thought I'd drop in while at work to see the competition...Damn, fine entrees. I really don't know how anyone can compete with that Jerk Bloody Mary. That is off the hook and a fine sight.

I was too drunk to go to the liquor store today, and for some reason they're closed on a national holiday! THOSE BASTARDS!

2/3 cup mango puree
1/2 cup fresh lime juice
1/4 cup tequila(had no rum)
1/4 cup water
1 tablespoon brown sugar
