Hellicious CheezyHabaPeno Cornbread

I've been wanting to make cornbread lately, but it's been too damn hot out to do baking...until today.

I took this recipe: http://allrecipes.com/Recipe/Skillet-Herb-Bread/Detail.aspx and messed with it a bit...hehehe.

Changes:

  • used half wheat flour instead of all white.
  • was out of Sage, so used Rosemary and used less of the spices
  • used less diced onion, and added diced jalapenos and habs
  • used a bit extra baking powder as mine's pretty old and with adding the cheese, it needed an extra boost
  • added 1/2 tsp each of granulated garlic, cayenne, and chile powder
  • used sea salt
  • added approx. 1 cup of shredded sharp cheddar
  • My CI skillet is only 9", so had to bake in a well-buttered regular 9x5 pan.
  • with about 10-15 min to go, dusted top with chile/cayenne powders, Kosher salt and some shredded cheese to get a nice topping

I wish I coulda made it in my cast iron skillet, but it's not big enough. And, this way I get a more bread-like product I can slice well.

Quaddy mate i have never tried cornbread before (GASP!) but your stuff looks absolutely delectable.
Any chance of posting the recipe or linking to a good one fine sir?

I did post the recipe I adapted it from, and the changes I made. ;)

Next time, I'd leave out the thyme and rosemary...it kinda overpowers the chiles taste. Perhaps just a pinch of Mexican Oregano would be better.

I bet it'll be even better after a night in da fridge though....Mmmm.
 
damn quad, that looks awesome. I've always wanted to put habs in cornbread. You makin some chili to go with that? Also good with collards if you can grow/buy them where you are. Fresh ones are seasonal down here, but go great with cornbread.

I don't usually make homemade chilli in the summertime, but I have a tin of Stagg's Dynamite that'll do. :)

I never really have eaten Collard Greens, we can get them fresh in stores here however. I grew up liking freshly steamed Swiss Chard outa the garden, which is similar eh? But, I haven't eaten 'em lately.

Yea, probably similar. Collards are good boiled up with ham hock or bacon and lots of vinegar-based hot sauces. And the cooking/serving liquid (pot liquor) is so good when sopped up with cornbread just like you posted.

Not great summer food (chili too, I know) but they taste so good I want to crank up the AC and pretend it's autumn.
 
Dude..I thought you had a decent sized dutch? No cast iron is a big fat FAIL. But...under the circumstances and also the fact that you did adapt, improvise and overcame when it came to the recipe and your oven situation...FAIL is removed and a hot cheezy WIN takes its place....less'n that can o'chili contained beans. Did it have beans? Well....DID IT??

I bet it did TB. Fail on the chili. Big fat WIN on the cornbread. That looks terrific Quad. I love cornbread with ribs.
 
LOL, yes I like chilli with beans...this is the NW, our chilli has beans. ;-p

Stagg Dynamite also has cayenne, arbol, habenaro, and jalapeno chiles in it..so there...hehe..

Honestly, I like just eating it plain with butter or toasted with a slice of pepper jack cheese.

Yeah, sucks only having the 9" skillet, but I like the loaf pan better actually as it makes for bigger slices. :D

Cornbread an some spicy pintos is the SHIITE...(as in: Iraqi militants;))

Not chili per se, although that is good too, but just the beans, you dig?

Pintos and a big ol ham bone, lots of salt and different types of pepper. That and some cornbread is the best.

That is why there is a song about.
(Beans and cornbread dunt dunt...)
