Pepper Mash

Ok, I keep hearing this and am not completely sure I know the correct definition. What is pepper mash? Is that fresh peppers smushed with certain additives (ie: salt, lime)?
 
Aged diced peppers (with vinegar, salt, spices, whatever) that ferments and turns into a mash to be used as a hot sauce base or can be used alone.

So if I went with a company that sell pepper mash as opposed to regular dried peppers, they will taste quite different, correct?
 
Yeah, the mash is a product in a jar. That's like comparing dried fuit to fruit preserves.

ONe word of caution - not all mash is the same. You need to try and find out how much pepper solids you are getting. The less pepper solids, the more saltvinegar you are getting (anf paying for).
