The RED in West Indian pepper sauce

Hi there, I am new to making pepper sauce but a veteran at eating it. I have been searching for GOOD bonnets with mild luck.. I am thinking of importing them..I just cant find any (Ontario). I live about an hour north of Toronto and the warm weather here just does not seem to be long enough to grow them...tried two years in a row. Any how on to my question:

Is the RED in most West Indian pepper sauce coloring?
