Alto sham cook and hold oven

My family had a fine dining restaraunt and we always used cook and hold ovens for prime rib as that is the only way to do it right.
I see many places now days cooking primr rib in a regular oven in about an hours and it is just horrible.

have any of you guys used one of these and what is your opinion on them for ribs and other cuts?
 
Altoshams are fine but not the end all be all. A regular oven does just fine. Altosham is best at holding. I actually prefer a Wolf or Viking for cooking.
