Guinness Fish & Chips

I have been craving this for a while now, and today I went to the store and Cod was on sale! So I got two big sides and a sixpack of Guinness and here we are.

First things first,

Ok now that that is taken care of. Here's the recipe:

2 lbs of cod fillets cut into pieces.
1 bottle Guinness (for batter)
5 bottles Guinness (to drink)
2 cups flour (for batter)
2 cups flour (for dredging)
1 tsp baking powder
1 egg
2 tsp salt
whatever other spices you would like to add to batter. I used some Old Bay and some pepper powder

I first cut up four russet potatoes into fries and soaked them in water

Then I made the batter

Cut up and seasoned the cod with salt and pepper

Then dredged them in the seasoned flour and let them rest on the wire rack

I blanched the fries at 300F then took them out and cranked it up toe 375F Here's what they looked like when they were done

And now the fish dipped in the batter and then into the 375F Peanut oil in batches until they are crispy and done about five minutes

Served with some Malt vinegar for the fries, a homemade tarter sauce, and a couple of batter dipped poppers and yeehaw!
 
Most excellent! I generally leave out the egg in the batter. While that stuff won't make a fatboy slim.....tasty..tasty..tasty... HB & R!!
 
It does look good. All that's missing is the newspaper! (and lemon and tartar)
 
I saw it on second glance. Post your recipe for the tartar sauce, if you will.
 
Tartar sauce:

1 cup mayo
1 Tbs dijon mustard
2 Tbs sweet pickle relish
1 Tbs lemon juice
1 Tbs hot sauce
1 tsp parsley

I don't even eat that sh*t. I use lemon and Louisiana style hot sauce. I was asking for the group so there.
