Hello from Down under

Hi there guys, long time reader, first time poster.

Finally thought i should get an account on here, and have e a go :)

So yeh im for Australia, i have only just started to get into growing late this year, read September.

I have a couple of chilli plants growing well at the moment, that being 1x Serrano, 1 x something i dont know what it is lol.

And i have a heap of seedlings growing up now to. They are:
Yellow Scotch bonnets
Red Savina
Naga Morich
Bhut Jolokia
Choc Hab
Orange Hab
Fatalii
Caribbean Red
Chiltepin

I like to make my own sauce, have only started this year tho.

I have one question tho, i was reading in the Bottling section, and people were talking about putting your bottled sauce in boiling water to seal it, now do you put the bottled sauce fully covered? or?

Well, welcome!!! September should be ok for you since that's the beginning of your summertime...I think.

I use the invert method for doing my sauces, but my bottles are steralized first.
 
Whats the invert method? Sorry noob here :)

So am putting the whole bottle under water when iam sealing it?
 
Just cook your sauce at 185-195 degrees for 5-7 minutes, pour fast into bottle, closed and invert the bottle so you get a good seal....ohhh sterilize your bottle first..:)
