Sonoma Jack's Habanero Cheese

Good stuff if you can find it. Little tiny bits of real habanero in SJ's always good jack cheese. It's got a nice kick to it.

I might try a slice on a mini burger. ;)

Take a 1/3 stick of butter and 2 tablespoons of flour and make a roux. Cook it nice and slow. Then throw in a 1/2 pint of cream. Bring to a slow simmer. Meanwhile you have earlier grated that SJ hab cheese and now will toss in a cup of that to begin. Stir it in slowly. Add more cheese or cream depending on how thick you like the sauce. Salt and pepper to taste. Now take that mini burger and dip it in the sauce...on second thought, pour the sauce over the burger...uhhhh....forget the burger. Throw it away and just drink the sauce!! Sorry...I'm sick and I need professional help.
