Cali Cornbread

Cali Cornbread: Chile relleno, Bacon, and Red bell pepper.

I poured a thin layer of cornbread mix in the bottom of the loaf pan, and then layered some red bell pepper, then some thick bacon strips, a chile relleno, more bacon, and another layer of red bell peppers, and then the top layer of cornbread mix.

I baked it for 18 min. at 400°, and then I let it cool before cutting it open. The flavors were what I was hoping to achieve. The peppers and bacon were good, and then you get the flavor and bite of the chile relleno. Gloria won't cut loose with the chile relleno recipe, but I can eat all I want of them.

Per box of cornbread mix;

1 red bell pepper

4 strips of thick bacon cut into bits

1-diced NM roasted chile w/out stem and skin

½ cup shredded cheddar cheese

I'd hit that. Chile relleno (my favorite) inside! :lol:
 
Looks tasty, but I'd ditch the mix, make the cornbread from scratch and bake it in a CI skillet.

I don't have the mobility to do some things from scratch as I used to, and a CI skillet is too shallow for this particular dush. To use DO would work, but it would be akward for me to use, since I'm in a wheelchair. It's all good my friend.
