Hot potato chips ...

:) Hot potato chips!

Peanut oil
6 large Idaho potatoes
1/4 cup malted vinegar
Seasonings (mix together):
1/2 tablespoon habanero powder
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon ground mace


6 Peeled, and thinly sliced Idaho potatoes. Soak in an ice water bath, with 1/4 cup malted vinegar. Pull out of the ice water bath after 30 minutes, dry them. Now deep fry (375 degrees in a high heat oil, like peanut oil). Take them out when ready, and place in a large brown bag, dump seasonings in and shake gently, but efficiently. Dump them out onto a platter lined with paper towels. Serve, or bag.

How about just adding the spices to store bought kettle cooked potato chips? I've often thought about trying to imitate the new Dave's Hot Habanero chips. Anyone tried?
 
Fiend - Don't you mean Blair's Habanero Chips? I often add some Nitro Death Rain (habanero powder) to my chips, be they Kettle or plain ole Lays - really kicks them up a notch.
