hot-sauce Kato's newest down south hot sauce

Kato's is going to bottle his oldest recipe sauce down South Hot sauce is carrot based with orange habanero's.

We wanted to develop a sauce that didn't change the flavor of what you are eating it on just add heat and I think we accomplished that.I know a sauce without flavor? We thought it would make a great addition to our award winning flavors and of course using fresh habs. It already has some flavor but won't be very prominent. The carrots don't add much in flavor either. The heat should overide the flavor of this sauce.

Tina,

You know heat is relative.
But knowing your sauces this might be considered a 7 we use about 124 orange habs to make 1 gallon of sauce.
I think it would be medium hot to your Fusion Fire being hot.

When we get the labels on it I'll send you a bottle to review.

When I sent sauce last time did we send a bottle of our original Island sauce? with mangoes & habanero's made bajan style with mustard & curry.
Also tweaked the recipe on the chocolate bars they are twice as hot as the original.

Mick

Yes, we got the mango... Marshall likes it best.

We're completely out of the cajun though, I was slathering my hamburgers with it and it only lasted the weekend.

Twice as hot... how the hell do you make it twice as hot?

What can I send you?

T.

I miss spoke what I should have said we are making the chocolate bars with twice as many habanero's

When we get the sauce bottled labeled & ready we'll ship up a bottle of Florida heat.

If I have my choice it would be the flame I can't put out Fusion Fire. Awesome stuff that makes your mouth water. e mail me and I'll give you our new address in the sticks around St.Augustine.

This sauce was made with Scotch Bonnets, carrots, lime juice and is packaged in a flask with a clear label over the vibrant orange sauce.

I had a hard time opening this sauce(being a sauce collector and knowing the story behind Kato)
But, unlike the other sauces kato produces there is a taste of raw heat and thickness that is a base for many dishes.
I give it a 8 of 10 on heat, and a 8 of 10 of flavor to a base of some good cusine.
