in a hot sauce what do you look for?

i voted flavor because when i eat chili or hot wings or anyting else i dont like to sit there take one bite and then have to down a ton of dring inbetween each bite...now i like a little bit of heat but i dont want to be in pain.
 
myself it's all about the flavor. I believe you need both heat and flavor.

We try to make sauces that combine both heat & flavor to enhance your meal not kill it. like our 2 time national champion Kato's Island Sauce that has a distinct curry flavor backed with the sweetness of mangoes & the heat of Habanero's & Cayennes. That is great as a grilling sauce for seafood and is good if that is the flavor you are looking for. We also have a new product that we like to say the flavor is the heat this particular product was developed to add to dishes that need a kick without masking or changing the flavor of the dish. the ingredients are chosen so as not to be of a strong flavor, so when added to a bowl of chilli you taste the chilli not the flavor of the hot sauce. We only use fresh habanero's to get the heat we use no capsicum extracts or resins which have a distinct flavor of there own besides being a tremendous heat source.
our products are made without using the extracts fresh pods only.

You didn't give me the opportunity to pick both, but for me, it's heat with flavour.

The 4 votes all went for flavor. Who we kidding! We must all like the heat secretly. I like heat but have tried many products that were way out of my league so like I always say heat is relative to the individual. I've seen big guys crying over a product that a 12 year old girl is trying & not even fazing her.

today at work i made a pot of chili and i brought with me a bottle of magnum 357 hot sauce...i guess the reason i made the poll was to me (most people have different levels of pain and heat tollerance) but i put some magnum 357 in my chili and i was in to much pain to enjoy the chili. now the other pot i dehydrated some habeneros and it had a good heat but it didnt overpower the taste of the chili...enjoyed the heat and the flavor with a liiiitle bit of pain......not mutch.
 
Well, I had to be honest. I didn't pick flavor.

I have run into a ton of sauces that taste great, only to complain that I wish it had more heat.
It's not as often that I run into a sauce with too much heat, and complain about no flavor.

Using a whole bottle of weak hot sauce in one sitting seems like an expensive waste to me.
(I call that Ketchup!)

Anyway, it's not black & white. It's hard to argue either side since I'm sure everyone agrees that finding the right combination of BOTH is what makes the perfect hot sauce for a chilehead. For me, I get excited when I find a non extract that makes my nose run.

Heat and flavor. My wife swears I've fried my taste buds, but I explain to her that I taste everything just fine. My tongue just isn't that sensitive to heat any more.

I love heat, but the sauce has to have flavor. I'm no masochist, but if it doesn't have heat, I probably won't buy it (but I'll use it if there is nothing else around.

One of my favorite hot sauces right now is called Dexter's 911 Scotch Bonnet Pepper Sauce. It is a jerk sauce, rather obscure, made in N.C. Boy, is it flavorful and it packs a good amount of heat.

You guys have me wanting to try that fusion sauce that has been talked about in here lately. Where can I acquire some? Let me know.
 
It has to be a pleasing blend of heat and flavor

With only one of the two, you are left with either a nice sauce (but not a hot sauce) or just a practical joke to play on friends. Flavor with a pleasing heat is where it's at for me. That is why (warning: shameless plug coming:) I love Lava Gourmet Hot Sauce. Flavor is king and the heat is certainly there. Check out the site below for all kinds of great info on this.
