Chipotle

I'm planning on making a BBQ sauce and want to add Chipotle to it for a smokey flovour
could anyone suggest a supplier or does anyone here on the forum make a good Chipotle
also what would have the better flavour? pods or powder
I'm wanting about to buy about 1lb

For true chipotles you'd probably have to order from Mexico or a Mexican grocer/supplier, but its not too difficult to make your own smoked chiles
 
The easiest way would be to add chipotle powder to your BBQ sauce. A one pound supply will last quite awhile. You can usually buy the dried chipotle pods in a Mexican market, it is a commonly sold item. At that point, you can grind your own powder. If you just want a smokey flavor, you can use smoked hickory salt. This also works on salsa or a fresh picante. I would just use the canned chipotles in adobo sauce. You can find them in pretty much any grocery store...Walmart, Kroger, Meijer, etc. They're in the Mexican section, I usually buy the La Costeña brand. All brands pretty much taste the same, they all have really good flavor and are dirt cheap. The adobo sauce they're packed in has really good flavor too, it's mostly tomatoes and onions.

Edit: I just realized that you're in Australia, so I'm not sure if those are available there. I'm sure you could order a case of the canned chipotles off the internet at least, I'm not sure how the shipping to Australia would be though if you can't find any suppliers within the country. Buying dried chipotles and making powder, or just buying powder might be cheaper.

I can do this, just need to find the right rig and source of Pecan hardwood. Doesn't look very hard to do. My wife has wanted to dabble in this for some time, and it look like this is going to be the year.
 
Chipotles are smoked red jalpenos, not green, so make sure you can get red if you plan to smoke.
 
Just smoking peppers doesn't really make them chipotles in my opinion, and not all chipotles are made from jalapenos. Real chipotles are smoke dried for days or weeks in outdoor pits using mesquite and/or other native woods. Anyone can smoke peppers but most people have found it difficult to duplicate the true Mexican chipotle, especially the most desirable típico type. Don't get me wrong smoked peppers are great, possibly even better than chipotles. I just have a hard time with exploiting the name of this tradiditional, regional and cultural delicacy.
 
You are correct the name does get thrown around a lot when smoking peppers. It seems he wants to buy anyway, as this is in the Marketplace area.

I will grow my own peppers and wait for them to ripen to the appropriate red color. For me this is my hobby and passion. I just want to create something fun and exciting to eat. I live in Vermont, it is virtually impossible for me to duplicate the real product. Just the same, it's fun trying.

I found a supplier here in Australia, but it won't be open till next week, so I'll start from there
 
I get some stuff from the link below. The company imports all kinds of chillies straight outta the Yucatan peninsula in Mexico including their Habaneros and Jalapenos. They are dried and smoked in Mexico.

I can vouch for the quality and taste :) The chipotle is incredible with white meat such as pork and chicken, including and especially good with white fish.

I have some Mexican Chipotle powder. I had a friend get it for me from Mexico. Very high quality. I can sell you what you want but I feel the best deal is $25 including shipping for 2 pounds. That is over 900 grams. That place wants $7/100 grams or $63 plus shipping.

I can do more or less than 2 pounds but shipping is going to be about $5 for express mail. and that leaves little for the powder. That is why I think the 2 pounds for $25 is a steal price.

Think about it. if you pay me say $5 for 4 ounce plus $5 shipping that is $10 for 1/4 pound. here you get 8 times as much for about twice the price. It is just a good deal.

No one can beat the price I got it for direct from Mexico. The chipotle is 2010 crop. nice and fresh. I am not making a dime on it. just trying to help out.

I make a super excellent hot sauce with it. also use in a shaker bottle directly on foods like pizza. If you put it in a glass jar in the freezer it will last forever. pack it down tight in the jar. squeeze out the air.

I have been making hot sauce for over 30 years. And there is nothing to compare with using Chipotle powder to make a great hot sauce. I see people paying $40 for 4 oz of super hots. but there has to be less flavor in 4 oz then in 2 pounds of less hot. What you really want in your hot sauce is flavor. You can always add more sauce to hour food. you can also add more flavor and more heat using chipotle powder. Think about it. You get more flavor from lower heat peppers then from high heat peppers if you simply use more low heat peppers in the sauce.


The way to make higher quality hot sauce is to use more peppers of lower heat. Thus for the same heat you have more flavor. Only makes sense. The beauty of chipotle powder is you can add the amount of heat and flavor you want to fit your taste for lower price real easy. just add more powder.


People pay big money and chase the super hots then they chase a place to find flavor and spend more money on flavor. does not make sense to me.

That is a most interesting chipotle.

It is listed as a 4 ounce bottle. but it is listed as Net Weight 2.1 oz. so maybe the container weight is included. I dont know here.

$4 for 4 ounces is about $16/lb but 2 ounces makes it $32/lb which is about what Penzey's Spices charges i.e. $32/lb.

Good chipotle is excellent but everyone in America wants to make a big profit. That's why I have my friend bring me chipotle from Mexico.

There are a few places in the US that you can buy large amounts from. I haven't had any problem importing them yet (as long as it is all labelled correctly and packaged properly and WA is pretty strict.
