recipe-help wanted steak sauce recipe

I'm looking for a steak sauce recipe,the recipe can be w/o peppers since I'll add my own kind into the recipe. I just want to try making my own steak sauce with some chiles, I've been useing "tabasco chipotle sauce" as steak sauce for some time (which tastes great) but I was thinking of trying to make some with jamaican hot chocolates (choc habs)
 
I have one but it is a secret recipe :shocked:
 
Steak sauce should be dark, a little sweet, and slightly tangy.
 
Depends...there are three different kinds in my mind - A1 types, Heinz 57 types, and unique types. When I was in college I reverse engineered Heinz 57 for a friend, but I don't remember how I did it. I wish I would have written it down, because it was dead on...

If you know what you like in a sauce, just experiment, that way you end up with a product YOU like in the end.
 
Also, since you will be cooking the steak, think of how you will be cooking it... marinating it, adding salt and pepper, adding anything at all, etc. If the steak will be a little salty you want a sweet sauce, etc. Balance the flavors.
 
Au Poivre is the best with filet mignon.
 
get some off the shelf steak sauce you love the flavour of then add some hab powder or a sliced/minced hab. I use Masterfoods Smoky BBQ marinade with a thinly sliced hab. it looks really nice, tastes fantastic and it only takes a minute to prepare. this also works when bbq'ing chicken pieces on the grill!
 
If you want A1 steak sauce here is a recipe for it...

Ingredients:
1/2 cup Orange Juice
1/2 cup Raisins
1/4 cup Soy Sauce
1/4 cup White Vinegar
2 tablespoons Dijon mustard
1 tablespoon Bottled Grated Orange Peel
2 tablespoons Heinz Ketchup
2 tablespoons Heinz Chili Sauce


Directions:

1. Bring to a boil for 2 minutes stirring.

2. Remove from heat. Allow to cool to lukewarm.

3. Put mixture in a blender till it is pureed. Pour in bottle.

4. Cap tightly and refrigerate to use within 90 days.



This recipe for A-1 Steak Sauce serves/makes 1.75 cup
 
If you like Heinz 57 here ya go...

Ingredients:
1/2 cup raisins
2/3 cup Heinz ketchup
1 teaspoon chili powder
1 teaspoon seasoning salt
4 ounces applesauce
2 tablespoons Wish Bone Italian salad dressing


Directions:

Put all ingredients in a blender and blend on/off for 2 minutes on high or until smooth. Keep chilled.

This recipe for Heinz 57 serves/makes 2 cups

I was thinking the same thing when I read that, at first I thought he had them reversed, but he has raisins in both. I'm too lazy to look it up.
 
Actually after re-reading them they both sound kinda funky! :) Wish-Bone salad dressing and applesauce?
 
A-l is worchester sauce, ketchup, garlic and onion powder. I am almost sure of it.

And really, anyone who puts a-1 on a steak is either making crappy quality steaks, or doesn't like steak.

I season my steaks and serve them with grilled peppers. Unless the steak is well done, it doesn't need sauce (or life support as I call it) IMHO.
