So, I tried starting the coals with a rolled up piece of paper towel dipped in vegetable oil.... worked great. Stayed lit for like 5 minutes which was plenty of time to get the coals going. May do this in lieu using the chimney; it's just one less step. You can also prepare a bunch all at once and put them in jar for future use.

Here goes, four pies, two with 00 flour and two with All-Trumps flour. They progressively got better. I think the stone was not pre heated enough.


00 pie 1. Pizza sauce and shredded mozz

No spotting on the bottom of the crust, a 4 minute cook.

The crust was very good by the end. Had that nice chew to it. I think I need to lower temps and pre-heat the stone more. I will eventually get there.
