Carribean Red Mango Salsa

3 Mangoes (must be refrigerated prior to cutting)
2 Cucumbers (refrigerated)
6 Jalapenos
3 Carribean Red Habaneros
1 Large Red/Purple Onion
3 Large Limes
Medium dice onion and add the juice from 3 large limes and stir.
Chop Jalapenos and Carribbean Reds and mix in with onions.
Cut mangoes and cucumbers into small chunks and mix into the concoction.
Chill and serve.
It makes a great chip salsa but I like it best on top of a chicken breast fresh off the BBQ with a Season salt rub served on top of a bed of rice. Serve with soy sauce and you're in heaven!

The cucumber adds a "fresh & crisp" taste to it!Sounds interesting. Never made a sauce with cucumber before. Adding this to my list as well.
