The Soup Thread

For some reason, I've never been a soup-maker. Well, until I joined THP. Can't explain it; it just is. At any rate, experimented with a new one tonight, and started thinking there may well be many of you who make not-just-ordinary soup and want to share. Here's tonight's creation. Sorry for the dark pic!

Ingredients:

4 Leeks, sliced thin
2 Yams (small), cut into small cubes
1/4 Cup Butter
1/4 Cup Flour
3 Cloves Garlic
3 Poblano peppers
3 Jalapeno peppers
Bell pepper
11 oz can Corn
Can Artichoke hearts
26 oz Chicken stock
1/2 Quart Half and Half
Cayenne powder
Cumin
Oregano
Mace
Sea Salt
Roasted chicken, shredded
Fresh Cilantro
6 oz shredded Monterey Jack cheese

Melt the butter over medium-high heat, add leeks and yams, sauteé until the leeks are soft. Add the flour, and stir to combine. Add garlic and seasonings to taste (except cilantro), then the chicken stock. Bring to a boil, and let cook until it starts to thicken. Reduce the heat to medium, then add everything else. Continue to cook until bubbly and the veggies are at the desired level of done-ness.

Today is Cantonese beef stew with daikon. Ive been wanted to try this recipe for sometime now. The Chu Hou paste is hard to find but i have some.

The only alterations i did is quadrupled the green onion, added a bay leaf and a little peppercorn to the spices. I did cut back to only 2 star anise because im not a huge fan of the flavor. I may add some salted fermented black beans near the end. They add a neat salty burst if you bite into one.
 
Edit: Crap, most of my daikon is bad and the ones at the closest market look like hell too. I guess im going to have to use some carrot and rehydrate some black tree ear mushroom.
 
I used to live down the road from a great Thai "hole in the wall". If you asked for #5 spicy you better REALLY be able to handle spicy. I got the Tom Yum #5 once and it was brutal. I could eat it but just barely. I think they rather enjoyed watching me nearly die from the heat.
 
That fiery bowl of soup is what cured a eating problem i had for over a month. Everything i ate tasted off and chalky until that day. I could not enjoy a meal until i endured that wonderful agony. :D
 
This was 4 . I don't go 5* on a first visit usually , unless someone I know recommends it. I will go 4 or ask server what level they like/ recommend. Nuclear is fun some times but not necessarily the best taste balance wise. I think I will switch to tom kha gai and bump up 5* on next visit. Hopefully they are fairly consistent in there spicing scale. Some places it is Russian roulette on what 5* means today. Lol
 
Tom Kha chicken is great. Tom Yum noodles are really good but only one place i know of makes it with seafood. The others don't offer it at all or its made with pork. I like it with fish balls, shrimp and fish cakes.
 
Had to try one of the older Korean places on the edge of our China town. I was craving a bowl of spicy seafood noodle soup. Korean jamppong is one of my favorites but i didn't feel like making it from scratch. Asian Kitchen in known for the plethora of side dishes (bachans) served with any meal. They did not disappoint mostly. The kimchi was too fresh/sweet and they did not have danmuji (sweet pickled radish) which goes awesome with spicy soup IMO.
 
The soup was excellent with the exception of using udon noodles. I got mine in the normal seafood version and my brother got it in beef. I really prefer it with a mix of beef and seafood but they would not make it that way for me.
 
Not my pic but it looked a bit like this. The table was literally covered with banchans. I cant imagine how 4 people fit all the food on one.

On a side note the place was packed with Koreans and the Korean pancakes were massive. Like medium to large pizza size massive. The pork, kimchi and tofu appetizer is nearly a meal for 2 all by itself but at nearly $16 it should be. Our bill was $25 for 2 massive bowls of soup, 2 drinks and the 15 all you can eat.bachans.
