I bought some fresh pink-eyed peas yesterday at the Farmer's Market. Today I diced some onion and garlic, sauteed them, then added in the peas and some chicken broth. I chopped some Criolla Sella and Dedo De Mocha peppers into the peas as they simmered, then added some cumin and coriander. About 20 minutes before they were done, I added in some spicy Italian sausage I got at the market, too.
To serve I sprinkled chopped green onions and some shredded cheese.
