So here we go, the 2012 season has started;

Yesterday the first one germinated....it is the infinity
and today another variety showed itself....the billy goat

I hope the weather will be better this year, cause last year ...it sucked ...big time.
in a month or two i will buy myself a polytunnel, pic's will follow soon after.

Today, the weather was nice so i decided to smoke some rocoto's from last season.
Take a look:

First of, preperation, sooking wood chips they need to be in some water for at least 2 hours.
today i've selected a mixture of 3 wood chips ; Hickory, Mesquite and Pecan.

After that is sorted, i'm off cleaning, defrosting, drying the chili's and making sure all of the seeds are removed

The chili's i'll be using today are; Turbo pube, rocoto chocolate and rocoto peron.

it's a time consuming job, but well worth it.

Finally done, now it's time to heat up the smoker

Try to keep the temp as low as possible, best between 70c and 90c.

After 9 hours of smoking, this what they look like :

They look rather nice, but they are still too wet. Now i'll need to dry them in my dehydrator, at a temp of 70c.

make sure, not to put to many chili's in , as they won't dry well

Wow, thanks for the tutorial. I want to do some smoking and drying if I get any pods this year.

Those rocotos look just great!
 
update: the next day;

The chili's have been in the dehydrator for several hours, this is what they look like:

and they are dry enough to be grinded into powder :

Nice to use as a rub or sprinckle on a sandwich or mix in with mayo for a really nice sauce and there's much more uses for this.
 
Good stuff, inca, looks like you get quite a bit of powder
from the pods. Thanks for continuing your demo! I'm
not really into eating hot chiles for their own sake, but
the powder/flake thing is very intriguing.
 
Good looking stuff! I have a several wilds and will happily work some trades later in the season! Can't wait 'till I get some pods for flake and powders...won't be too long. I'll sort through my seeds and see what all I have in there...

i would love to have a packet of that powder.

Its also amazing to see a big pile of peppers reduce to just a pile of powder.
