Dice up some fresh shiitake mushrooms, purple onions, whatever other peppers you like to boost up the heat a little, a medium bodied cheese preferably made with beer, mix the little cubes in a bowl(start with the cheese cubes and add as much or as little of each as you like) then spoon the mix into your gutted jalapeņos; stuff it in there real good as a little will be lost when cooking. Then wrap the pepper with turkey bacon like you're wrapping a tennis racquet handle(start by covering the hole then twist the bacon on top of itself in a spiral, skewer it with a toothpick at a diagonal so the hole stays covered and it doesn't unwrap). Then fry it up in olive oil or put them on the grill until the bacon cooks and cheese gets gooey.
Enjoy! Sometimes I like to add a little fresh, ground rosemary too. Add pepper to taste if you get unflavored turkey bacon.
