It is amazing to me how pepper's flavor changes with different treatment. The example there is that they have different flakes based on the time in the sun. I have found peppers flavor change with cooking and/or drying.
Urfa pepper's flavor is a result of a week-long sun-drying process. They're wrapped up tightly at night and sweated and that really brings out a smoky flavor. Then the peppers are pounded into flakes and sprinkled with olive oil and salt, which really enhances the flavor. You've got to try them!
