Sandwich of the Month

Hey y'all. A recent discussion with THP about Cuban sandwich's in another thread has inspired me to begin this thread.

What is a sandwich? According to wiki...

I myself shall endeavor to post a Sandwich of the Month for every month. This month I tip my hat to one of my favorite sandwiches, The Cuban.

While I encourage y'all to post up your Cuban for SOTM, for the sake of popularizing the thread, feel free to post your sandwich. Be it BLT, turkey sub, gyro, po'boy, etc.

Some rules.

1 ~ Meet the criteria as linked above according to wiki.

2 ~ True, burgers are sandwiches but as we have other threads devoted to them, we will not include them here in this thread. No burgers.

3 ~ List ingredients and methods of how the sandwich was put together.

4 ~ No matter if it is a classic reuben or tuna salad, include a heat ingredient.

5 ~ Pics are mandatory. Talk is cheap. Show us the money!

6 ~ No tortillas. We have taco threads already, and that also means no stinkin' "wraps".

7 ~ Have fun.

I bought another one of those flat cut corned beef briskets. I think im going to turn it into pastrami.
 
Soaked in water for 8 hours to remove some of the salt
Pat dry and cover in fresh ground coriander and black pepper. Let it rest overnight uncovered in the fridge.
Toss it on the smoker over cherry wood until it reaches 160F....gunna need to cut it in half for this.
 
Either wrap in foil and finish in the oven at 200-225F until done or......
Oven steam on a rack in a covered pan?

How come you didn't just buy a plain flat and start from there?

Because a piece of flat cut brisket is almost $8/lb. I got a flat cut corned beef brisket for around $4.50/lb
 
I could buy a whole prime brisket though for under $4/lb but thats a lot of really fatty brisket.
 
Pastrami is basically just a smoked piece of corned beef. So i could brine from scratch for a week+ or just soak the already brined brisket to remove some of the salt.

Am I mistaken or did the sandwich thread become the hot dog thread for a bit?  It summoned me, and now that I am here be are back to brisket.  Damn.  I was envisioning blurry pictures of hot dog water.
 
Well a trip to Fresh Thyme saved my precious Ginsberg flat cut!!! They had some slightly smaller and slightly fattier pieces for $4/lb. It also has less than half the sodium of the Ginsberg corned beef. Tomorrow is supposed to be nice if the smoker cooperates. Only complaint is its nitrate free so it wont look as red. Ive had their corned beef before. Its was very tasty and i thought it looked fine.
