Blueberry Strawberry Caribbean Pepper Jam

I like mine with the bits of goodness put back in after skim when I eat jam. This is my first try at making Jam ever!


Ingredients
2 quarts of strawberries
3 pints of blueberries
4 cups of sugar
1/4 cup lemon juice
1 package pectin(liquid)
[background=rgb(255, 255, 255)]1/2 cup - 1 cup of peppers( I used Yellow 7's,and FDA SB)[/background]​


[background=rgb(255, 255, 255)]In large saucepan, crush blueberries and strawberries with potato masher. Add pectin and lemon juice. Bring to a boil. Add sugar and return to bowl for 1 minute, stirring constantly. [/background]
[background=rgb(255, 255, 255)]It said 1 min,but I actually went another min. When adding the sugar I didn't stir,and added the sugar in a circular motion.[/background]

[background=rgb(255, 255, 255)]Skim the top,or Cheese Cloth strain(I didn't try it this way).[/background]
[background=rgb(255, 255, 255)]I skimmed the top because I wanted the bits left in the jam.[/background]


[background=rgb(255, 255, 255)]Let sit overnight,and put in the freezer for 25 mins the following morning.[/background]

I couldn't be happy with the result. Just enough heat,and the fresh fruit was AMAZING!

It may not be the way the pro's do it,but fortunately for me .... I love it!
 
i would double the sugar and lemon juice and pectin next time u make this based on the amount of fruit u put in. Or cut the fruit in half.
