Sun Dried Tomato's & Other Nonsense

Hey y'all.

A couple of weeks ago I was visiting with my dear sweet ma and she mentioned how she is just over run in tomato's. She grows about 50 times more than she can use and she wanted me to drive up to her place in Arkansas and take a couple of bushels off of her hands. Well I love tomato's as much as anyone but what am I going to do with 2 bushels? I'm not a canner. So what, freeze 'em? My freezer is already jam packed with chile's, veggies, seafood, other crap. I have no room for anything else anywhere!

So a few days ago in the afternoon I go out to my truck. A cold front must have come through here in north Texas as it was only 109 outside but as I opened the door to the truck I was immediately body slammed by a giant super nova of hot air. Geez Louise! My first thought was holy chingao!!! I could cook a steak on the dang dashboard! Then after that thought, the pea in my noggin' started spinning out of control and then it hit me...I could sheet pan up a heap of tomato's and sun dry them right here in the truck!!

Now as I said, I love tomato's. I 'specially like to be liking sun dried tomato's. But I also know that they're not really sun dried but simply dehydrated. I love getting the ones jarred in olive oil and use the oil when cooking. Great stuff! Only problem is that sheeit ain't cheap! Next time you're at the store check the price's on sun dried's. Its frikken crazy!

So I'm in the local Try-N-Save the other day and I see some great looking Roma's on sale for .99 cents a pound. That's not bad for north Texas so I decided I'd get 4 or 5 pounds and do some experimentation in The Blues Kitchen.

I decided first that I would start some drying in my truck to see how that goes. Then concurrently I though I could start some in my Mini-Chief smoker, but with just a touch of smoke, as I wanted to mostly just dehydrate them.

So I got them all washed and hand wiped as much of that spray cheese crap they put on them off.

Then I cut 'em all in half. Most of them went onto the smoker racks.

This rack was going on the dashboard of the truck.

I laid an old towel on the dash for a little protection just in case any tomato's have a blowout from the heat.

Dang. 8 hours in on the smoker and they are chuggin' right along.

For what took only 8 hours in the smoker, this is at the 24 hour mark in the truck, for the same result. Only half way there.

And now the smoker tom's are perfect after 20 hours in the smoker.

As you can imagine, I couldn't help but sample a few. I find no difference in quality compared to any sun dried tomato I have bought either pre-packaged or in bulk out of the bins at the hippy store. Mine just might be even better since I didn't use any preservatives. And they taste incredible.
I lost track of just how many I shoved in my pie hole and ate.

So I shoved a bunch of them in a Ball 1/2 pinter with some whole garlic cloves and a few japones and topped them up with olive oil. I reckon I'll wait a week before I try them.

I am digging them so much I went and got another 5 pounds of Roma's to do up another batch.

The truck tom's are still going and blowing and I'm anxious to see how them come out but thus far they are looking good!

So next time dear old ma wants to give me a truck load of tomato's, I won't refuse. I'll take all that she'll give me and then some. I reckon I'll jar up a few in olive oil and vacuum pack the rest.

Nice TB!

Any idea the temp difference between the inside of the truck and the smoker? Also, I know dried tomatoes often come with seeds in them, but did you consider deseeding any?
 
Ahhh dang.

G I didn't think to take temps on either the truck or the smoker.

My best guesstimation on the truck is probably around 135f give or take.

The smoker? I dunno' as even with the heat element, the unit itself sat in direct sun all day which only compounded the effect.

What really surprised me is how dang easy they are to do.

Wash, cut and load.

Turn on and forget it.

Check and rotate in 8 hours.

The truck toms are just as easy.

Just don't drive with them on the dash.

And I can't tell you how awesome they taste.

You just gotta' do some and find out for yourself!
 
So here's the real deal sun dried tom's after 48 hours sitting on the dash board of my truck.

Unlike the commercially dried and sold fugazi sun dried's, I can actually label these as such since they really were dried in the sun. The truck doubles as a reverse heat sink drawing in the heat and the closed cab is a great barrier to bugs and other critters that would try and get into them if they had been dried outside in open air.

On monday I'm 'posed to meet my dear sweet ma in Frisco. We'll see if she gives them the approval of quality stamp.
 
Roma's are in full supply and I bought some the other day to do up in the smoker.

It's been threatening rain for the last 5 days but we got nary a drop and it looks like today is my window.

I should have bought more.

This batch is just went in the smoker with 2/3 of a pan of alder chips for a bit more smoke.

There's a little breeze today but should still get up into the low 90's. Just about perfect for smoking tomatos.

I'll check these out in about 10 hours.
 
Dang,knew I shouldn't of got rid of my old truck sitting in the driveway!You mean, I could have been drying tomatoes in it this whole time! Those definitely look delicious! Will have to give this a try myself ASAP
 
Looks great but I don't know about simply storing in oil. From what I hear its old school thinking, there are a lot of reports of botulism with oils not heated or processed properly, but I'm certainly no expert

While in jars in oil, I still keep them in the fridge and I'm blowing through them pretty quick.

I'll be using some of them tonight in some mix for poppers.
 
Looks good TB, cant wait to grow some tomatoes this year, start planting in about a month

I'm fixin' to start building a couple 4'x12' raised beds soon for planting next spring. Its an absolute must here as the soil here in north Texas is mostly dense clay. I haven't decided on using 2"x12" lumber or cinder block. Last I checked Home Despot had cinderblock for .99 cents each and 2"x12"x12' for $14.99 each. Not bad for either.

All I'll be growing is roma toms, garlic, some herbs, and chile's.

Pequin and wild tepin mostly but some t-scorps as well.

Here's how the toms came out after 18 hours in the smoker.

These have just the right amount of leatheriness. I haven't decided whether to vac pac as is or jar them up in balsamic vinegar.

They taste awesome!

i've been doing pretty much the same thing with Juliet mini-roma tomatoes... a little sea salt, cold smoke, and finish in the dehydrator... yum!
 
I think I may have to borrow my dad's smoker to do this. Right now I've been dehydrating every few days since I'm overrun in tomatoes as well.. I have about 15 gallon sized bags filled up now.

You can use any smoker just like a dehydrator. It sure beats running the oven all day and I think faster than electric home dehydrators.

And what you don't eat, if vacuum packed or canned, they make nice Christmas gifts stocking stuffers for folks that like that stuff. I know I do.
 
TB, I was in the store last night and Roma's were .79 a pound so, this weekend I'll have the smoker out and going. Going to have to find some refill rolls for my Vacume sealer now too.

Nothing beats home made!!
