Roasty Toasty Chocolate Habanero Sauce

This sauce has carrot, onion, apple cider vinegar, cane sugar, roasted garlic, roasted chocolate habanero, and roasted tomatillos, lime juice and clementine juice and h2O.

You have learned well young Grasshopper. Your sauce looks like it'll be the BAM to any meal. Now you'll need to give it a week for it to reach its final taste as all the flavors get all jiggy with themselves.
 
Great looking sauce if it is in the jar in the first picture.
But there is no Red carrots in that jar is there?

Does the roasting help the taste or is to just to crisp the skin of the Hananero?

They are local grown orange carrots in there, they are very sweet and help give it nice flavor. It's the jar thats open. The other one is red scorpion paste. Roasted them over open flame gives them a roasty flavor.

I'm thinking about smoking some tomatillos and red bhuts sunday if i can get more tomatillos at the farmers markets this week.
