smoking Deer Snausage

It's time for the annual sausage making again! :woohoo:


This is most of the ingredients. (I ended up making way more than this though)

First batch in the smoker. This is spicy Polish sausage with Douglah and Scoth Bonnet

The second batch is smoking now. It's the same as the first, but with pepper jack cheese.

The third batch is the same as the second, but with Barrackpore, Red 7, Butch T, Bhut Jolokia, and Chocolate Bhut added. :mouthonfire:

I'm making about 50 pounds total, so it should last me about a week... :lol:

Awesome looking! Now maybe I will have something new to do with the next 100lbs I bring home! Great looking sausage. Which brand you have for slamming those casings full?

What I MEANT to say was, Even tho I don't care for Deer meat, I would like that sausage.

That looks like it would be good just sliced up with a dab of mustard and a toothpick.

Here's the recipe:

30 lbs venison
20 lbs pork shoulder
6 TBSP sugar
12 TBSP kosher salt
4 tsp all spice
8 TBSP black pepper
10 TBSP carraway seeds
5 heads garlic
2 TBSP onion powder
1/2 cup worcestershire
1 bottle white wine
8 cups water
12 tsp cure (if smoking it)
hot pepper powder to taste
high temp cheese if you want

This makes a very lean sausage, which I like. Most people would probably sub pork fat for some of the meat.

It's just an LEM meat grinder with a sausage stuffing attachment. It works fine, but I would like an actual sausage stuffer.

That's actually how I usually serve it. Toothpicks with some spicy mustard.
 
Thanks a lot! I don't hunt myself, but I tie flies and trade them for Bucktails and venison, and this looks like a great way to use the venison...
 
Does the cheese need to be different than regular cheese for sausage making - I've heard of there being cheese for sausage making. IDK if its true but would like to make some with cheese

Yes, it's called high temp cheese. It comes diced in about 1/4" cubes. I'm not sure how or why, but it has a higher melting temp than regular cheese. I get it from my local butcher shop along with the hog casings and cure.

LOL! Why the hell would you put liquid smoke in something you're smoking? SCOVIE FAIL!

I think scovie was kidding about the liquid smoke because I've ranted about that crap in the past.
