Boil Like A Cajun

Scored some "not habs" in the hab bin at Albertson's, so I guess I'll have to test them out in today's crawfish boil!

I could sit at that table all day eating and drinking, until I passed out face first into a pile of empty shells.

I was tempted to.... trust me!

You know you're getting old when you think to yourself "I have to stay sober enough to clean up and change my oil after.." lol! I just put my car up on the ramps.... that's good enough for now! After that's done, it's ON!!!! Juice up and get ready for The Walking Dead tonight!

Oh, and I think those "non-habs" I got from the store were scotch bonnets. I should have taken pictures before I opened them up and threw them in the water. I ate a chunk I found while I was digging through the crawfish pile, and that sucker was good... right before it lit me up! I put about six of them in the boil, and you could taste it in every bite. Awesome!
 
Not a Cajun, but I lived just east of Erath for awhile. Sure do miss the crawfish boils... and boudin, and etouffe, and, and...
 
Tell me that's not boudin in the middle of that pile of mud bugs. I love any food that you need a paddle to cook! Rock on Phil.
 
Why yes, good sir... it is indeed boudin!

I've had second, third, and fourth helpings since this afternoon.... the garlic will be coming out of my pores by morning... I'm so bloated!
 
Damn...I knew it. Cajun/Creole is my favorite cuisine of them all. I haven't been down there in a while, but I am lucky enough to have a restaurant locally that is owned and cheffed by David Prudhomme, nephew of Paul. I can't wait for crawfish season to send its spoils up here.
 
That pic is PERFECT. Makes me want to return to my own roots (Houston), where we used to make a similar mess. Just spread out newspapers on the table, then pile it high with crawfish, shrimp, crab - whatever you caught or bought off the boats. Don't wear your "fancy" clothes and don't worry - your face WILL be a mess by the time you get done!
