Looking for some sauce/other ideas for all my peppers

Growing a lot, was just wondering what types would be best for what obviously going to make sauces, but not sure which ones should have savory stuff with it and not sure what should have sweet stuff with it

also not sure what else I could do besides sauces besides making powder so... any ideas?

All the chinense (everythinh except 3 below) will be good with a fruity base (doesn't mean it has to be sweet!  I make a pineapple sauce that is very heavy laden with garlic!).  The annuum (thai bird's eye chili, purira and numex twilight) are good with savoury flavours.
