Haha funny you mention the internal thermometer, i had put one in, wasnt happy with the placement, pulled it out, and the cord snapped. No more probe.

 

So i just checked this one by feel, must of been a little too long then.

Brisket and some ribs done this arvo. Still very very dark but tastes great
