Find a good source for Organic produce. You can usually get Juicing carrots there. I think they will give a good base from which to make your sauce. A simple one would be

Peppers, chopped
Carrots, shredded
Onion, Chopped
Cloves Garlic Minced
Roma Tomato
Lemon Juice

combine all ingredients in a pot, enough water to just cover and bring to a boil for 10 minutes then reduce to a simmer for 45. run through a blender and finalize according to the Hot Sauce 101 thread by Salsa Lady.

Give it a taste then put it away for a week before you try it again and enjoy.

Have fun

I'll give it a shot:

16 oz carrots, peeled, roughly chopped
8 oz white wine vinegar
6 oz white onion, peeled, roughly chopped
4 oz freshly squeezed orange juice
2 oz honey
2 oz fresh garlic, peeled, roughly chopped
2 tbsp grated ginger
1-2 tsp sea salt
peppers, stemed and roughly chopped (however many you need to reach your desired heat level)

Place all ingredients in a pot, bring to a boil, lower heat to medium low, cover and simmer for 30 minutes.  Let cool, blend to desired consistency, reheat to 190 degrees and bottle accordingly.  You may need to adjust vinegar to get desired consistency.  Should yield about 1 quart, maybe a little less.
