I couldn't figure out where to post this stuff and didn't want to inundate The Drunken Chef, so I figured I would start my own thread for posting my foods, hot sauces and other creations.

Yankee Enchiladas filled with, yep, more pork, tomatoes, onions, peppers, chiles, rice, and cheese.  Topped with Ranchero sauce, moar cheese, and black olives and baked.  Then topped again with sour cream and salsa verde.

Save me one of those enchies.
 
I'd eat more than one but that would cut into my hoskey consumptive allowance.

I can't WAIT to get back to civilization and start some firey madness. Till then, save some for me!
 
I really do not enjoy making this, but we have a plethora of wonderful tomatoes around here and I have a small legion of fans from past years.  I must make salsa.  I make a version of pico de gallo.  I prefer the fresh version, but I do my best to follow canning specs for this stuff. 
 
Ingredients:
Jet Star Tomatoes
Jalapenos
Green Bell Pepper
Vidalia Onion
Cilantro
Habanero
Olive Oil
Sea Salt
Smoked Sea Salt
Cracked Black Pepper
Garlic
Lime Juice
White Vinegar
