This is the Seafood Sandwich Throwdown!
 
Seafood is defined as:
Fish
Mollusk
Crustacean
 
Sandwich is defined as:
Bread on both sides.
No unleavened flatbreads (Which basically means no tortillas or other unleavened flatbreads, but leavened flatbreads such as pita and naan are welcome. I think we can all agree a taco or burrito is not a sandwich, or the type we want to see here, but something in a pita is acceptable.)
 
Pretty simple, huh? So have at it! Catch your own fish and bake your own bread... for cool points... and possible vote swaying (old pics, new pics, as long they are of that fish.... maybe you froze it, etc.). Not necessary of course. Just cool points.
 
Will the classics be perfected? Will we see something new? It's all up to you!

Fresh fish. Line caught wild. Never seen a freezer.
I loves me some mahi.
This fish sandwich is going to be an interpretation of a Miami classic.
I even went to a Cuban grocery to get most of my stuff...
Including the bread, made fresh with real lard!! Boosh!!!
Y'll might be able to figure out where I'm going, but I have a twist.
It's gon' be good!

I'm just gonna roll with this as it's ready.
 
The fillets are marinating, kinda ceviche style, in orange juice, lime juice, garlic, sea salt, serrano
I'm not gonna let them cook all the way like that, though. Just infuse some of the citrus and spicy flavors.
 
Blackened Lionfish on an onion bagel bun topped with sauted onions, peppers, fresh tomato, and homade pineapple scotch bonnet jelly.
