Spicy beef ribs with garlic and thyme

Want to share this dish with all beef lovers at thp.

You need 3 racks of beef ribs(you can smoke for 15 minutes if you want)
8 cups of whole garlic
4 cups of fresh thyme
Large 22 qt thick pot with lid
2 table spoons of sea salt( if you need more salt you can put in later)
8 charlston cayenne
Water to cover ribs

First: put fresh thyme in bottom
Put garlic on top of thyme
Put cut up ribs on top of garlic and thyme
Submerge the ribs in water
Add salt and peppers
Cover bring to boil
Turn down to medium
2 hrs(or till ribs are tender)

After ribs are done remove put on plate.
You can brown under broiler in oven
Heat it up with you favorite super hot sauce
But do not throw away the water!!
Strain off the thyme and garlic from liquid
You can make a paste to put on prime rib, steak
Your liquid can be used after cooled in frig quickly.
Put in shallow pans to cool quickly.
When cool take off fat on top
You can make the best Au jus for prime rib
Just add your favorite red wine and reduce over medium high heat
