My latest attempt at creating a hot sauce.. turned into more of a blazing-hot thick jelly that smells sweet.
"Maple Lava Jelly"
Ingredients:
- 3 large Naga Jolokia peppers ground using mortar & pestle
- 10-12 super-chili peppers ground
- 3/4 to 1 cup of lime juice
- 1/2 teaspoon of hot chili powder
- ~1 teaspoon of white sugar
- ~1 tablespoon Maple Syrup
- ~1/4 teaspoon of white vinegar
Mixed all ingredients together, heated to boiling and reduced heat to a simmer. Stirred occasionally and added lime juice & Maple syrup as it cooked down and then spooned final result into small jar.
It made around 1/2 cup (125 ml) or so.
A single lick is enough that I'm sweating up a storm and I'm semi-used to adding Sudden Death sauce & chopped Ghost peppers to my meals. lol
