Taco Sauce

Made some taco sauce tonight.  Yielded (9) 1/2 pint jars plus some left over and in the refrigerator.
 
Tomato Sauce
Water
Lumbre Powder
Red Hatch Powder
Chimayo Powder
Douglah Powder
Paprika Powder
Cumin
Mexican Oregano
Onion
Vinegar
Garlic
Salt
Sugar
Lime Juice
 
 
Mixed all ingredients.  Brought to boil and simmered 30 minutes.  Processed in sterilized jars in boiling water bath for 35 minutes.

8 ounce tomato sauce
1/4 cup water
1/4 tsp paprika
1/2 tsp red hatch powder
1/2 tsp Chimayo powder
1/4 tsp douglah powder
1.5 tsp cumin
I tbsp onion (processed in food processor)
1 tbsp vinegar
3/4 tsp garlic
salt to taste
1/4 tsp sugar
1 1/2 tsp lime juice

this is the basic recipe. adjust chile powder and/or any other ingredients as you like.  mix well.  bring to simmer.  cook for approximately 30 minutes.  pack in sterlized jars.  process in boiling water bath for 35 minutes.

I will have to change up the pepper powders. I dont have Chimayo, dougla , or hatch. I may use JT's comment and use guajilla , ancho and naga (Love Naga's)
