Guru's Garden - Traveling the World in Search of Peppers

Just starting this glog now so it's one less thing to do in a few months when I'm knee deep in compost and getting things in the ground.
 
Not much to report at the moment. Strains yet to be determined, but I'll probably end up growing too many like always...lol
 
 
Only thing that's going on right now is a clean back patio and the chickens doing their part turning over my compost pile on the daily. Intersted in seeing how the soil microbes appreciate the added chicken poop!

So, whole peppers go into the jar, and then over the course of 2-3 months, they break down and become submerged in their own liquid?
Do you ever stir them as they're fermenting? Or have to scrape mold off the surface?
Do you notice many differences in flavor between this and the more standard salted mash?

I like to fill a jar in one shot if I can. Otherwise it's like half of them are ready and half are still jiving. It's not a big deal if you can't fill a big jar though, just make a smaller jar

Sometimes I can shake the jar or swirl it gently, allowing liquid to touch all fruits. Whole peppers. I don't like to see most molds, so make sure and fill as full as possible.

I do all mashes, salt included. I like the way a no salt, cold mash gives you more cheesy/aged flavor, more quickly than a salted mash. To me the salt may be inhibiting some critical critters that I just happen to prefer the flavor compounds produced from their by products. To each his own. Also, this method is far superior in color of pod retention! The color of the finished sauce retains that deep ripe color of whatever variety of pepper it came from. All mash methods are great in their own way.
 
Hey Rich, I sure would like to get some seeds from those Giant Rocoto when you get a chance. I need to start a new plant in the basement.
Your garden is looking great and producing some good looking peppers.

I seriously doubt I'm going to get a crop resembling any of that. But my plants are lush (in the green department). In another month I may have some peppers, I have faith...

This is weekly. Its a good year for peppers~! Faith is in the soil, feed it!

Ok so not to rub it in or anything but my contest plant, the Aji lemon Drop is pumping out over a thousand grams per week of ripe pods....
 
 
Wonder what the final weight will be?! I've never documented what I actually harvest before! Will be interesting!

OK, if you've got a plant that can pull 1 kg/week of CO2 out of the air and turn it into peppers, I wonder if you've hit upon something we can use to fix global warming if we scale it up?
