Plastic top jar?

I want to make some hot sauce that is shelf stable. Can I use bottles with plastic tops and how do I do that? I make a lot of pepper jellies, but use metal lids and hot water bath can them, and those jars aren't the ones I want to use for a pourable sauce. Is the sauce good to go when you pour it into the bottle steaming hot and then invert it till it cools?
