BREAKFAST!!!

I was looking for a breakfast thread and never found one that seemed open-ended enough to post on. So here y'all go!
 
Posty up your breakfast if you like, even if it's cold leftover pizza.

Whoops! You made brunch instead? That's cool... it counts.
 
 
I'll go first with a take on a Cuban breakfast called Huevos Habaneros. It means Havana Eggs, but it's not made with Habaneros. In fact, it's not traditionally spicy hot. (Cuban meals typically aren't.) So, I had to SoFlo it up a bit and call it something different.

These are eggs baked over sofrito with butter on top in a custard cup for about 12 minutes at 375 F (yolks are still a bit runny). Then topped with more sofrito and garnished with some cayenne powder, but sofrito isn't spicy hot either. So...
 
Sofrito Caliente
 
(Enough for one serving)
 
1/4 cup chopped onion
1 Fresno pepper (cored and chopped)
1 green jalapeno (cored and chopped)
1 clove garlic, minced
1/4 tsp ground cumin
1/4 cup peeled, cored, chopped tomato
olive oil for sauteing
 
Saute the onion and peppers till the onion is translucent. Then add the garlic and cumin for a minute more. Then toss in the tomato for another minute or two. Salt and black pepper to taste.

Yeah ... I had a friend in college who used to make me pick up lambic on the way to his house all the time - so he could mix it into rolling rock's and beck's and shit ...

yep the same one I used on the chicken on sat..    Clementine Fire by Burner .      Going through it fairly fast .  Wish  Burner  had free bike courier delivery here like they do in TO. 
 
Okay, so I didn't make this(anyone want to take a guess where we were)but it was good breakfast, or maybe it was just the Sauce.  ;)

The waiter looked at me sideways when I asked for extra Serrano's, and stood there staring as I chomped into it when he did bring them (like he'd never seen a White guy eat a seared Serrano)  or maybe it was that I brought my own bottle of LuckyDogHotSauce
 
I ended up using half that Bottle of red label on just My breakfast (should have brought pepper powders too)

Just noticed y'all have really yellow egg yolks over there in 'Murica. 
Here ours are all golden orangey Hawaiian sunset with a hints of Atomic Tangerine (that's a real colour by the way wtf). 
Wonder what they feed your chookins? 
Or makes me wonder what they are feeding ours :eh:
 
yours are probably free range or organic  DTS ....   I think  the pale  yellow colour here is due to diet and forced laying systems.     When I would  eggs from people that used to own their own hens, the shells were much thicker and the yolks would be intense yellow to orange.   Breed of hen might have something to do with it also. 
 
 
new phone  so pics will be even crappier for awhile til I get used to it.
 
Had a craving for steak and eggs. ( store had some little top sirloin cap steaks on sale)   leftover baked tater  turned into panfried taters,   pretzel bagel , sprinkled some coarse salt on top      habanero hot sauce from a mixed bottle pack my in-laws gave me at x-mas.
