Thanks, Andy! That "medium" heat Original Recipe was made with only Chocolate Scotch Bonnets (no Douglahs). First batch I've made that way.
I'm toying with the idea of making 3 different heat levels of that sauce in the future:
"Medium" - just chocolate Bonnets
"Original" - 50/50 Chocolate Bonnets and Douglahs
"Very Hot" - just Douglahs



I just wanted to say "Thank You" to all of you guys/gals, here on THP, for your continued support, encouragement, and advice that you've all given me for the past couple of years that I've been here. Yeah, this is just a hobby for me, but it's something that I really enjoy (as I'm sure you all do too, or we wouldn't be here ;) ). I'm truly flattered by a lot of the feedback that I get from you guys. Not to mention that a lot of you have been kind enough to send me bottles of the sauces you make, which I really enjoy!

Anyway, this is just my way of reciprocating the generosity that I've been lucky enough to be a part of here. I'd be willing to bet that I enjoy sending these boxes out to you all, more than you like receiving them, haha. Puts a big smile on my face, and I love giving back to this great community of chileheads

Sweet Jesus Mike... you're too kind. Mike knows I avoid seasalt because of my shellfish allergy and made a batch of Original recipe with a different kind just for me. If that isn't going out of your way I don't know what is!

Had it on a hot dog with some my reaper pale ale mustard...omg this sauce is so good... and HOT! My last bite a big glob plopped onto my dog.. corner of my mouth is still burning and it's been a good 15 mins.

Also trying out my fig sauce on the steak. Can't wait to send you a bottle with some my mustard.
