What da heck... why not?
 
And what better way to start a flog than smokin' somethin'?
 
I ran across some chicken thighs on sale for $0.77/lb, and it was a nice day, so I decided to do it up. 10 plump thighs came to 4 bucks even. Not bad!
 
Here they are all rubbed up with a sweet and spicy concoction and ready to go...

Thighs are the most forgiving cut IMO (and my favorite) because they have plenty of skin and fat, so they always comes out juicy. I did these at about 230f or so until the internal temp reached 165f. I didn't pay attention to the time, but I'd guess about 2 hours. That's it.

I'd like a big ol' wood fired smoker some day, but this puppy has served me well for 15 years or so. Actually, the burner burned out not long ago so I replaced it with a heavy duty turkey fryer burner. Now it kicks ass, even when it's freezing out.
 
And yep, plain water in there. I actually just use the water pan to deflect flames if I get a flare up, and to catch drippings to prevent flare ups. It works good for that. :)
 
wasn't knockin' the smoker, mine is electric but a water smoker, so 2 thumbs up.
 
but, i luv to bathe the water with the likes of rosemary or other herbs'n'spices, a dose of soya sauce and the boiling results in a new flavour on the meat.
 
.............so tell us..........what would did you use?  my next wood is sugar maple available at my walmart....if they ever get it in.
 
I'll have to try some herbs in the water. That sounds good!
 
I used a mix of cherry and mesquite this time around. It's what I had left over. I've never tried smoking with maple. I would also like to try pecan. I've eaten stuff smoked with pecan, and it was great, but it's hard to find around here.

ya got my wheels spinning for some yard bird this weekend
 
The players: leftover smoked chicken (diced), japs halved and seeded, cream cheese, Mexican cheese blend, and 7 Pot powder.
 

 
Mixed this stuff together.
 

 
Stuffed the jap halves, topped with shredded cheese and more chicken, then into the oven.

I saw this stuff at the store and had to give it a try.
 

 
Oh wow. It's not good... :sick:  I'm glad I only bought the little tiny bottle for a buck.
