Caribean fusion hot sauce, mango, ginger and Czechoslovakian pepper

I start a new ferment days ago. This time make a fusion with Caribbean flavor.

20 Czekoslovakian Black peppers for 23oz bottle
Onion red
Garlic
Carrot
Mango
Ginger

Starter I use lactobacillus. My friend owning dairy, gave me some fresh milk yield serum

to sleep.

I have a few ounces of juice left over, so I made a fresh salsa with left me and has been delicious.

cooked, processed to achieve a creamy mixture

Then we bottled hot method

In he ferment today there is much activity and CO2. It took 10 days from the start. Pretty CO2 activity

I'm doing different ferments in small quantities to decide which I liked more. It's my first time with pepper ferments

AH! No worries, sometimes "Auto Spellcheck" puts in some funny words also, especially when using a cell phone. :lol:

Now it sounds even better!

I found some Czech Black chiles at a local farmers market last summer and really like them. They should make a good ferment.

True, that's why I hate writing with my ipad or phone.

They are very good and not too spicy, but enough.

The sauce that I cooked with the leftover wort has been very tasty and I use almost daily. Goes well with meat and chicken. The ginger gave it a touch of very strange and very pleasant flavor

As I did in my other sauces, here my custom label to adorn the bottles.

Then give to family and friends some bottles.

Nice looking label! Check spelling of Caribean...(Caribbean)? maybe correct where you are, up here Caribbean has 2 B'~ It's all about where you are what's correct.

Keep us posted on the ferment when it come around.
