grilling Grilling With Bacon

Just another bacon love page. Found this recipe and had to share it. I'll be trying it this weekend.

Bacon Wrapped Onion Rings with Sriracha Mayo Dipping Sauce

An easy appetizer recipe for bacon wrapped onion rings.
Prep time: 00:15
Cook time: 01:30
Total time: 01:45:
Ingredients
  • 1 pack Bacon
  • 4-5 Sweet Onions
  • 2 T Black Pepper
  • 1/2 cup Sriracha Hot Sauce
  • 2 T Mayo
  • 1 tsp Lime Juice
Cooking Directions
  1. Cut onions into 1/2 inch thick rings and pop the internal rings out until you have a nice sturdy onion ring.
  2. Brush onion with hot sauce.
  3. Wrap each onion ring with bacon and secure with a skewer or toothpick.
  4. Heavily cover the onion rings with pepper and smoke, grill or bake for about 90 minutes at 250-350 degrees.
  5. To make the spicy sriracha mayo, combine 2 T of mayo, 1 T of sriracha sauce, and 1 tsp of lime juice. Mix well.

 
 
     Looks like a great idea! I imagine the onion would get nice and soft and sweet but the bacon, once crisped, would do a good job of holding it all together. I bet the flavor of a chocolate hab or some other brown pepper would complement the bacon and onion flavors really well.
 
I'm going to have to try that on the smoker!
I'm guessing that since most bacon already has a smoky flavor to it, the best choice of wood would be on the milder side. Apple? :think:

I recently dined with an old cooking buddy and he is one to know no boundaries when cooking
Anyway......
Everything above still applies,with the addition of fresh "grilled"pineapple rings as well as lightly grilled onion rings
this recipe goes off the chain.
Grill and cool the rings,stack'em(onion/pineapple) an bacon wrap'em then slow grill'em to render down the bacon nicely(but not crispy)
