You can prepare ANY Mexican/Aztec/Mayan or inspired dish as long as it has a homemade mole sauce!
 
Fusion is allowed IF the mole is authentic (the key elements exist and it is not adulterated beyond recognition as mole). So no fused mole! Then it ain't mole! But you can mole up whatever you want, or keep it all authentic. And you can doctor the mole to fit the dish but not beyond the point of being mole!

[SIZE=medium]pumpkin seed[/SIZE]
[SIZE=medium]Almonds[/SIZE]
[SIZE=medium]raisins[/SIZE]
[SIZE=medium]crackers[/SIZE]

[SIZE=medium]To cook chicken:[/SIZE]
 
[SIZE=medium]0.           Slice and devein/deseed some dry chilies. Toast them in a hot skillet for a few seconds on both sides. Heat some water until it is very warm, and then soak chilies for 30 minutes or so. [/SIZE]
[SIZE=medium]1.           Prepare fresh ingredients. Place chicken pieces in pan with about 1/2 onion, a few cloves of garlic pieces, and 5 sprigs of parsley. Fill pan with cold water to cover ingredients.[/SIZE]
[SIZE=medium]2.           Bring to a boil over medium-high heat, then lower the heat. Cook about 15 minutes. Strain the broth out. Set the chicken aside, and discard the other ingredients. [/SIZE]
[SIZE=medium]3.           Heat some oil in a skillet and toast pumpkin seeds until they start popping a lot. Empty the seeds into a blender along with about 1 cup of prepared broth. Toast individually in the same way: almonds, peanuts, plantain, raisins, crackers, and garlic. Each time you add an ingredient to the blender, add a little more broth if necessary. Blend ingredients to a paste like consistency. [/SIZE]
[SIZE=medium]4.           Heat some oil in a sauce pan on medium heat, and transfer the mixture from the blender into this pan. Lower the heat and add in the bay leaf and cinnamon. Stir the mixture frequently, and cook for a few minutes while bubbling. [/SIZE]
[SIZE=medium]5.           Drain the chilies, reserving the liquid for later. Tear the chilies into pieces, and add some of the reserved liquid with the chili pieces to the blender. Blend. Add this to the mixture cooking in the sauce pan. Cook and stir for several minutes. [/SIZE]
[SIZE=medium]6.           Add some chocolate pieces and stir well until melted. Add some of the remaining broth, and cook a few more minutes.[/SIZE]
[SIZE=medium]7.           Add the chicken you made earlier (which you strained the broth from and perhaps discarded the extra ingredients from as I chose to do) and let cook for 15 minutes. Salt well. When ready to plate, I used a spoon to pick out the chicken with holes that drained the sauce out back into pan. Thus, when the chicken pieces are placed on the plate, then use another better utensil to drizzle sauce remaining in pan over plated chicken pieces. Looks delish key! I'm curious - did you eat that as presented, or put it over rice or have tortillas with?
 
I see key's strategy here... all about the mole itself... makes you really read what's in there, and if you want rice and beans with it, go make some! Ain't no one winning for rice and beans!

Key~  Step #7 is a little confusing or I'm not reading it right.  "Add the set aside chicken, then spoon over chicken pieces"???  That mole looks and sounds really good!  I'd chow it down with some tortillas or chips in a heartbeat!  Nice Job!

Read the steps posted- "Add the set aside chicken to the mole, then spoon over chicken pieces".  How can you add the set aside pieces to the mole then spoon the chicken mole over the chicken?  Is there More chicken to spoon the mole with chicken over?   
 
It's no biggie, just want KBK to have clear directions.  it's all good~
