review Review: Kato's Down South Hot Sauce.

Okay. Night before last, I finally cleared out enough stragglers (hot sauce bottles with just a little in the bottom) to open a new hot sauce. My choice? Kato's Down South Hot Sauce (in memory of Kato)

I have always enjoyed Kato's product, as their sauces tend to be more subtle culinary works of art rather than a blast furnace of heat. Don't get me wrong; I like the heat. At the same time, though, I enjoy a interesting blend in seasonings and flavors as well. Many of Kato's sauces are actually great to use as marinades.

Anyway, down to business. I heaped a bunch of Kato's Down South on my spanish rice last night (since Kato's sauces don't push the heat envelope, I felt safe in doing so), and took a bite. This sauce actually has quite a kick to it. While it wont fry the palate of a pepper head, I would urge amateurs to use caution. What a pleasant surprise.

The second thing I noticed was that the flavor was very sublte. Too subtle to peg down, in fact. I poured some into a teaspoon, to taste solo, ready to try to guess the nature of the seasonings used. Again, I was surprised. The flavor was the clean, crisp flavor of a habanero pepper. There may have been some other seasonings involved too, but the overriding flavor was pure habanero. Not even a vinegar bite.

If you are a pepper purist, you will enjoy this sauce. If you are like me, you use a variety of sauces for a variety of reasons. Sometime, I just want to taste a habanero, and this sauce is a great vehicle. I recommend that you give this sauce a try.

I think Kato's is next on my list of sauces to to get. Can't wait to see what it is like! The Down South Hot Sauce sounds like a good place to start
 
This is excellent sauce. A wonderful habanero flavor...and only 3 ingredients! It's a triumph of simplicity.

I you love the great flovor of scotch bonnets and carrots, you will love this!
 
I had a bottle which I sent to Va. Beach Chili Head meeting. Haven't got it back yet. I did hear that several people claimed it's toooo hot. I may never get it back though, as the Lady who has it says it is fabulous and she wants to, or has put it in EVERYTHING! :twisted: :twisted:
Heard nothing but KUDOS for the Mango sauce. :(
