Garlic chilli philly dip

Thinking of making a dip for after tea.
 
Got a big bag of naga's
Block of philly cheese
3 limes
Whole clove of garlic ( not to sure how much to use )
small piece of ginger
fish sauce
 
Think of mixing all together and using as a dip with jatz biscuits.
 
any suggestions  or help would be  much appreciated

Hi lancecook didn't see your message till today, sounds good maybe some shrimp,crab,cilantro and scallion I'd be happy to tuck into that. If y'all make it let me know. :)
 
Hmm…. sorry I didn't see this sooner! Agree - it seems to need some herb, and cilantro is a good choice, IMO. Maybe some lemongrass, too. Try a touch of mustard powder - I've been finding lately it's more versatile than I used to think of it. Possibly some allspice.
 
Yeah, so now it's a few months later, so I assume you found some good use for all that stuff already. Sometimes threads get buried like this - don't take it personally, please!
 
I'd leave out the fish sauce and ginger.
And only a few drops of the lime. 
Mix the rest, and add just a dash of worcestershire and some dill. Salt and pepper as necessary.
Maybe put it in a shallow pan and bake it for a little while after you mix it up. 
Dip crusty bread cubes in it.
