M060 Organic Wild Blackberry/Honey spread

One of the best parts of the summer is when I get the chance to harvest my Wild Blackberry vines for those delicious black berries.
 
In the past I've juiced them, mixed them into bread, smashed them and put them over ice cream and made pancakes as well.
 
One of my new favorites for experimentation is organic honey from local farmers.  Honey is delicious and healthy for you, with numerous benefits that go beyond food.
 
So by coarsely smashing a pint of wild blackberries with a potato masher, and mixing in a quarter cup of local honey, I whipped them together with a balloon whisk for 3 minutes, then put it into the fridge for 48 hours to get happy.
 
This amethyst colored spread is delicious and great on toast, ice cream, mixed with crushed walnuts as a garnish for game, poultry or even as tasty treat by the spoonful.

I'm thinking the honey will preserve it longer yet still retain the fresh berry flavor. I gotta try this.
