Candied Jalapenos

While at the grocery store the other day I came across some red Jalapenos.  Seeing that I opened my last jar of candied Jalapenos last week, I decided to take advantage of this find and fire up a batch.  Here are a few pictures:

Wow, that looks great. I've never tried a candied pepper before. I didn't even know that was a thing!

And now I've found DaQatz's 2010 post about how to make them. Fantastic. Will have to try this one of these days if work doesn't kill me first. :)
 
yeah I have never tried mixing red, and green jalapeños. I would imagine it tastes a little different. tctenten you don't need that many peppers. Though you do need more then it will look like, since they shrink a lot during the candying process.

It's a method of preserving peppers using sugar. You cook the water out of the pepper in a sugar syrup. Much like drying peppers, this helps preserve them. Mind you it does leave them vulnerable to molds, and yeasts. Which is why it's a good idea to can them.
 
I made a big batch using green and red jalapenos back in 2010 when DQ posted his recipe, and canned them for Christmas gifts.
 
Then I had to make another batch a few months later, when everyone I gave them to, returned their empty jars and requested refills.
 
I haven't made them in a while, but my friends and family still rave and talk about them..

Do the Jalapeno's retain their heat level? I found recipes that also use cayenne powder to the syrup which, got me to thinking about the TSMB powder that I have  :fireball: for a few jars
