favorite Favorite Not Hot Peppers?

Hi all -- I'm a n00b here
 
What are everyone's favorite peppers for flavor beyond hotness.
 
Me? I love Jerk so Cachucha peppers are one of my faves...

I'm not sure if I have a favorite yet, I'm just starting to explore the non hots, so currently I'm a fan of bell peppers in cooking, especially as stocks for soup and stew.
 
I'm a fan of Ajvar... an eastern-european pepper condiment made from Kapia peppers. The Kapias are long-season peppers... about 100 days, but meaty and sweet. I grew pods last year that got to almost a half a pound apiece.

Another quicker-growing sweet pepper is the Pimiento-type the Hungarians call a "tomato pepper" because of its resemblance to a ripe slicing tomato. These are only medium-fleshed, sweet and crunchy... exellent for salsas and salads.

A lot of people like the Red Marconi, which makes a good frying pepper. It's tasty, ripens quickly, is quite large and thin-fleshed.

I suppose it all depends on what someone considers 'not hot.' Personally, my absolute favorite in this category is the Fresno. If I had to guess, I'd say their about the same (or a touch) hotter than a jalapeño. The flavor is amazing though, almost red bell like - but with added sweetness, then there is still the mild heat added to them. They make a great base for hot sauces.
 
I'm a newb myself.  Have not been exposed to hardly anything other than Bell peppers, banana peppers or jalapenos.  But I do love jalapenos; fried, pickled or raw in a salad.  I want to try Numex Suave Orange and Aji Dulce, they are supposed to have good flavor with out all the heat.  But I will have to try and locate some seeds, nothing like that in the nursery's around here.
 
I have yet to grow any sweet peppers, but Ive had some very tasty store bought sweet peppers. The ones that come in their own bag, small, typically red/yellow/orange in the bag. Some of them were incredibly sweet and fruity.
 
I plan on growing a lot more mild and sweet varieties next year..
 
Not really hot, but mild to med would be for me a home grown Fresno, but I'm quickly becoming a fan of Aji Omnicolor for flavor right now as well.
